In this hour-long class, we will explore the history of the Greek diner and its profound influence on American food culture. On the eve of World War I, Greek immigrants began buying up the diners abandoned by German Americans facing anti-German persecution brought on by the war. In these kitchens, the new Greek owners would adapt traditional German travelers’ fare with a touch of the Mediterranean and a pinch of entrepreneurial spirit. The result: A truly American way of cooking and eating.
